Espresso Chocolate Cake

200g dark Fairtrade chocolate, chopped
1 tbsp strong espresso Fairtrade coffee
1 tbsp rum or brandy
100g ground almonds or hazelnuts (Fairtrade)
5 eggs separated
Icing sugar for dusting

Pre-heat oven to 180°C. Sit a bowl over a pot of simmering water and melt the chocolate, coffee and rum in the bowl. Remove from the heat and stir. Add the almonds and mix well. Beat the egg yolks into the mixture one by one. Beat the egg whites until they form stiff peaks, and then fold these in.

Butter and flour a 20cm round cake tin pour in the mixture and bake for 40 - 50 minutes. Allow the cake to cool before removing from the tin. Dust with icing sugar to serve.

Cocoa pods are about the size of American footballs and contain moist white cocoa beans and pulp. These are expertly fermented and dried to develop the chocolate taste. Cocoa is one of the most environmentally friendly tropical crops.

Fairtrade assures consumers that the coffee we drink was purchased under fair conditions. To become Fair Trade certified, an importer must meet stringent international criteria; paying a minimum price per pound of $1.26, providing much needed credit to farmers, and providing technical assistance such as help transitioning to organic farming. Fair Trade for coffee farmers means community development, health, education, and environmental stewardship
