Delicious Cashew Butter Cookies

115g Fairtrade sugar
110g packed brown sugar
115g butter
115g Fairtrade cashew butter
1 egg
137g flour
¾ tsp baking soda
½ tsp baking powder
¼ tsp salt
Mix together sugars and butter, mix in cashew butter and egg.

Mix together dry ingredients - flour, baking soda, baking powder and salt. Mix into the butter mixture.

Wrap dough in plastic and place in fridge for three hours. Preheat oven to 190C, shape dough into 1¼" balls. Place about 3" apart on ungreased cookie sheet. Flatten in crisscross pattern with fork. Bake until light brown, nine to ten minutes. Cool on rack and then enjoy.

Just a spoonful of Fairtrade sugar makes the world a fairer place. High tariffs on sugar imports protect EU sugar beet farmers and sugar refiners at the expense of farmers in developing countries. Fairtrade sugar means producers can get a fair price.

Fairtrade cashew butter

The Cashew butter available from Oxfam Ireland Fairtrade shops is a spread made solely from roasted cashews. Commended two years running in the 1999 and 2000 Organic Food Awards as "a deliciously nutty treat with a difference."
