Banana Cake
125g softened unsalted butter
1 ½ cups Fairtrade sugar
2 eggs
1 cup mashed ripe Fairtrade banana
Few drops of pure vanilla
1 teaspoon bicarbonate of soda
½ teaspoon ground cinnamon
1/8 teaspoon round allspice
½ cup buttermilk or ½ cup milk and 1 teaspoon lemon juice
Preheat oven to 180°C. Cream butter and sugar until pale and fluffy. Beat in eggs, banana and vanilla. Sift the dry ingredients and add to mixture, alternating with the buttermilk. Butter and flour a 20cm tin, then line the base with the baking paper. Spoon the mixture into the tin and bake for 45 minutes or until cake tests clean. Cool on a wire rack in tin before turning out. Allow to cool completely before cutting.
Walnut and Brown Sugar Topping
Combine 3 tablespoons of walnuts, coarsely chopped with 3 tablespoons of self-raising flour, 1½ teaspoons cinnamon, 100g butter and 3 tablespoons of brown sugar. Scatter over uncooked cake and bake as above
